Size15 jar

Fifteen jars go in at once.

A canner built as a rectangle rather than a drum, so square-shouldered preserving jars actually use the space.

The shape is the point. Round pots waste the corners; this one is 521 mm long and 292 mm across, which is why fifteen one quart jars fit in two layers with room for the water to move around them. It holds 49 litres brim full, the plate is 1.5 mm of 304 stainless, and the bottom is flat so it sits square on gas or on the top of a wood stove.

Two racks come in the carton. The lower one keeps the glass off the base, away from the direct heat, and the second sits on top of the first layer of jars so a second layer can go above it. The handles pull off for washing and storage, and the lid drops on closely enough to bring a full pot to the boil without a long wait.

Questions

Can I use it for beans, vegetables or meat?

No. This is a water bath canner, which means the contents never go above boiling point. Low-acid foods such as beans, plain vegetables and meat need the higher temperature a pressure canner reaches. Keep this one for jams, jellies, pickles, chutneys, fruit and other high-acid preserves.

Will it work on my stove?

The maker lists gas and wood stovetops, and the bottom is flat and brushed so it sits square on either. At 521 mm long it is wider than a single domestic burner, so plan on it bridging two, and check your cooktop's own guidance on oversized pots before you fill it.

Why are there two racks?

One does a job the other cannot. The bottom rack holds the jars up off the base, away from the direct heat, so the glass is not sitting on hot steel. The second rack goes on top of the first layer of jars and gives the second layer something flat to stand on.

How many jars really fit?

Fifteen one quart jars, which is fifteen at 0.95 L each, run as two layers with the second rack in place. Smaller jars pack in more tightly. Leave enough water above the top layer to cover it, and do not fill so high that it boils over.

How do I look after the stainless?

Warm water and a mild detergent, then dry it properly, especially after hard water. Skip the steel wool and anything chlorine based, both of which mark 304 stainless over time. Take the handles off to wash them and store the racks inside the pot with the lid on.
