Same patty, every time, all day.

A burger shop is a consistency business. This is the tool that makes patty number four hundred the same as patty number one.

Put a paper in the tray, drop in a handful of mince, and pull the lever. The plate comes down flat and the mince spreads to the edge of the 150 mm tray, so every patty is the same diameter. Thickness is set by how much meat goes in: less for a thin smash-style patty, more for a pub-height one. Press the button on the side and the plate lowers for the next one.

The body is cast aluminium with an anodised finish, the tray is stainless, and the gears are rust-proofed, so it washes at the end of the shift without fuss. It weighs six kilos, needs no power and no assembly, and the paper holder on the side means you are not hunting for a sheet between patties.

Questions

How do I set the thickness?

By the amount of mince. The tray is 35 mm deep and the plate comes down the same way every time, so more mince means a thicker patty. Weigh the first few until you know the scoop that gives the thickness you want.

Do the patties hold together on the grill?

Yes, if the mince is cold and you press firmly. The press compacts the meat so a formed patty holds its shape better than a hand-formed one. Chill the formed patties before cooking and they hold even better.

Can I use it for things other than beef?

Anything you can form: chicken mince, lamb, pork, fish cakes, veggie and bean patties, falafel mix. Wetter mixes want a paper on both sides so the top does not stick to the plate.

Does it need power?

No. It is a hand lever, and a button on the side lowers the plate. There is nothing to plug in, which is why it works at a market stall as well as on a bench.

What do the papers do?

A paper under the mince lets you lift the patty out clean and stack them without sticking. The holder on the body keeps them to hand. A thousand come in the box.
