4 kg Two Tank Chocolate Melter
Warm water does the melting.
Chocolate scorches the moment it meets a hot element, so this machine puts a tank of water in between.
Two stainless pots sit in a bath of water that U-shaped elements heat from underneath. The water carries the heat to the edges and the middle at the same rate, which is why the chocolate comes out smooth rather than grainy in the corners. The dial covers 30 to 85 °C and a small light tells you when the element is working, so you can leave it ticking over while you pipe, dip and set.
Each pot holds about 2 kg and lifts straight out, so dark goes in one and white in the other and the washing up is two pots and two lids at the sink. The body is stainless, 370 mm front to back, and the whole machine weighs 3.5 kg.

Questions
How much chocolate does it actually hold?
Four kilos across the two pots, which is about 2 kg in each. That is roughly forty 100 g blocks. You can run one pot on its own if you only need a little, as long as there is water in the tank underneath.
Will it temper chocolate?
It will hold any temperature you set between 30 and 85 °C, which is the part most kitchen gear gets wrong. The cooling and seeding steps of tempering are still yours to do; the machine's job is to keep the chocolate exactly where you put it while you work.
Can I melt anything other than chocolate?
Yes. The maker lists butter, cheese and sauces as well as chocolate, and the water bath suits all of them because nothing sits directly on an element. Keep one pot for chocolate and the other for savoury things if you would rather not share flavours.
Does it need water in it?
Always. The outer tank is filled with water and the pots sit in it, which is what makes the heat even. Running it dry is what kills this style of machine, so it watches the water level and shuts the element off when it drops too far.
How do I clean it?
The pots and lids lift out and wash in the sink in warm soapy water. Wipe the stainless body and the panel with a damp cloth and dry it off. Do not put the body in water, and let the water tank cool before you tip it out.
