A bun pan rack is where bread proves, pastry cools, pizza bases wait and a catering job stacks up before it goes out the door. This one takes twenty full-size sheet pans, or forty half-size, on runners spaced for air to move between them. The whole thing is aluminium, so it weighs under 14 kg empty and never rusts, and the rack is rated to 240 kg loaded.

It rolls on four castors, two with brakes, so a full rack moves from the oven to the cooling corner to the van and stays put when you lock it. The edges are polished and rounded to protect your hands.

Questions

Which trays fit?

Full-size sheet pans, about 660 × 457 mm, one per tier, or half-size pans, about 457 × 330 mm, two per tier side by side. Standard gastronorm trays with a rim also slide on the runners.

How far apart are the runners?

Twenty tiers over the height of the rack. If you need more height for a tall loaf, skip a tier.

Do I have to fit the castors?

No. They bolt on if you want the rack to roll and stay in the box if you do not. Most kitchens fit them; a rack that moves to the oven and back is the point.

Will it go through a doorway and into a van?

It is 660 mm wide and 1767 mm tall, so it rolls through a standard 820 mm door upright. For a van, tip it and load it flat; empty, it is under 14 kg.

Can I cover it for proving?

Yes. A rack cover with a zip front turns it into a proving cabinet at room temperature and keeps flies off trays waiting to cool. Any cover made for a full-height 20 tier rack fits.
