One pull, one base.

Rolling bases by hand is the slowest job in a pizza kitchen. This takes it down to a second per base.

Drop a dough ball on the bottom plate, pull the lever, and the top plate comes down flat and square. It presses to 5 mm, so every base comes out the same whether it is the first of the night or the two hundredth. The spring returns the lever on its own, which is what lets one person keep a steady rhythm without a second hand on the machine.

It is a cold press, not a heated one, so it does not cook or dry the dough. That suits pizza bases, tortillas, roti, pita and pie lids, and anything else that starts as a ball and needs to be a disc. At 11.2 kg it stays put on the bench when you lean on the lever.

Questions

Does it heat the dough?

No. It is a cold press. The platens flatten the dough and nothing else, so the base stays soft and you cook it however you normally would. If you want a tortilla cooked in the press, you need a heated tortilla press, which is a different tool.

Can I change the thickness?

It presses to 5 mm. For a thinner base, press once, turn the dough a quarter turn and press again; for thicker, use a larger ball and stop the lever short of the end of its travel.

How big a dough ball does it take?

Anything that makes a disc up to 240 mm across at 5 mm. Smaller balls make smaller discs, which is how people use it for dumpling wrappers and taco-sized tortillas.

Do I need the papers?

A sheet above and below the dough stops it sticking to the platens and lets you lift the base off in one piece. A hundred come in the box. Without paper, a light dusting of flour or semolina on both platens works for most doughs.

How do I clean it?

Wipe the plates with a damp cloth and a little detergent, then dry. Do not put the press under a tap; the frame is steel and iron and should stay dry.
