The first thing a cafe counter needs is somewhere to hold the food at temperature without cooking it further. This is that.
It is a stainless well with a 1200 W element underneath, filled with water, with the food pans sitting in the water. The thermostat runs from 30 to 85 °C, so you can hold a sauce at a gentle 60 or keep a soup just under the boil, and the water spreads the heat so nothing catches on the bottom. Two 1/3 pans and two 1/6 pans come with it, each with a lid, which is enough for a main, a side and two sauces.
A drain tap empties the well at the end of the day without lifting it. At 540 mm wide and 7.8 kg it fits the end of a bench and moves when the layout changes.

Questions
Can I run it without water?
No. It is a wet bain marie and the element is designed to heat water, not air. If it runs dry the cut-out stops it and the light comes on. Top up, switch off, wait a few minutes and switch back on.
Will it cook food, or only keep it warm?
It holds food at serving temperature. At 85 °C on the dial the water is hot enough to keep a soup steaming, but it is not a stove; cook first, then hold. Food should be above 60 °C when it goes in.
How much power does it draw?
1200 W, about the same as a kettle. Give it its own power point during service rather than sharing a board with a second warmer.
Can I use my own pans?
It comes with two 1/3 and two 1/6 pans with lids that suit the well. The maker does not list other pan sizes for it, so ask us before buying pans.
How do I clean it?
Drain through the tap while the water is still warm, wipe the well with a cloth and a little detergent, and wash the pans and lids. Do not put the body under a tap; the element is underneath.
