Kneads like hands, only it does not stop.

A spiral mixer turns the bowl and the hook at once, so the dough is folded and stretched rather than beaten. Bread and pizza dough come out of it right.

Every part of the dough is carried past the hook and pushed against the fixed breaker bar in turn, which develops the dough evenly.

The head tilts back to lift the bowl out. It is the machine a pizzeria buys when the planetary mixer is being asked to do a job it was not built for.

Questions

What is the difference between this and the planetary mixer?

A planetary mixer has one tool orbiting a fixed bowl and takes a hook, a beater and a whisk, so it does cakes and cream as well as dough. A spiral mixer only kneads, and it does that better: the turning bowl and fixed breaker rod develop dough faster and keep it cooler. Buy this for bread and pizza, the planetary for everything else.

How much dough can it do at once?

Up to 3 kg of finished dough. That is a dozen 250 g pizza bases or four 700 g loaves.

Does it need a special power point?

No. It plugs into a standard power point; the motor is 450 W.

Why does it stop when I lift the guard?

The guard has an interlock. The motor only runs with the guard down, so a hand cannot reach a turning hook. Lower the guard and press start to continue.

How do I clean it?

Clean the bowl, hook and rod after each batch and wipe the head and base with a damp cloth. Do not hose the machine; the motor is inside the head.
