Seal the sauce with the steak.

A suction sealer pulls liquid into the seal and fails. A chamber sealer pulls the air out of the whole box, so wet food packs like dry.

The bag lies flat inside the chamber with its open end across the seal bar. Close the lid and the pump draws the chamber and the bag down together, so nothing is sucked out of the bag because there is no pressure difference across it. Marinades, stocks, sous vide bags with butter in them, a whole tray of portioned mince: all of it seals cleanly, and the vacuum reaches −100 kPa rather than the −60 or so a countertop suction machine manages.

It is a 27.6 kg stainless box with a pump in it, and it behaves like one. The cooling time is adjustable so the seal sets before the lid lifts, and there is an emergency stop and start on the panel. Under 70 decibels, which is quiet for a machine with a pump in it.

Questions

Can it seal bags with liquid in them?

Yes, that is the point of a chamber machine. The bag and the chamber are evacuated together, so nothing is drawn out of the bag. Stock, marinade, soup and sauces all seal cleanly. Leave a little headroom in the bag and let hot liquids cool first.

What bags does it take?

Plain chamber bags, up to 320 mm wide and about 350 mm long to fit the chamber. It does not need the embossed bags a suction sealer uses.

How long does a cycle take?

It depends on the bag and the setting. The cooling time is adjustable, and a bag of dry goods needs less time than one full of stock.

Does the pump need maintenance?

It is an oil-lubricated pump, and a bottle of oil is in the box. Check and change the oil as the manual describes, and replace the heating wire or tape when the seal looks uneven; spares of both are included.

What power does it need?

A standard power point. The motor peaks at 1700 W at the start of a cycle, so give it its own outlet rather than a shared board.
