Draining a fryer should not mean waiting an hour for the oil to cool and then carrying it in an open pot.

This caddy is a steel bucket built for the one job every fryer kitchen does and nobody enjoys. The powder coating inside and out is rated to 200 °C, so the fryer can be drained as soon as the last basket comes up. Four clips press the lid down onto a heat-resistant ring, the base is welded rather than seamed, and the whole thing stays sealed while it is carried out the back.

A filter bag drops into the mouth and catches crumbs and batter as the oil goes in. Oil that has been filtered this way can go back into the fryer for another service, which is where the caddy pays for itself. When it is spent, the same bucket goes to the collection drum.

Questions

Can I pour oil in straight from the fryer?

Yes. The coating is rated to 200 °C, which is above normal frying temperature, so the fryer can be drained as soon as the baskets are out. Keep the lid off while you pour and clip it down as soon as you are done.

Does the filtered oil go back in the fryer?

That is the idea. Oil that has been strained through the bag and kept sealed can go back for another service. Judge it by colour and smell rather than by count; once it is dark or smokes early, it goes to the collector.

Does it have wheels?

No. This size is carried, with a fixed side handle and a side-mounted handle. Full, it is close to 30 kg, which is a two-handed lift. If you drain a bank of fryers every night, a wheeled caddy is a better fit.

How do I clean the filter bag?

Tip the solids into the bin, rinse the bag in hot water, and let it dry. Replace it when it starts to tear.

Will the oil leak in the back of a ute?

Not if the clips are shut. The ring seal and welded base are there for exactly that trip. Stand it upright and wedge it so it cannot tip; the seal is designed for the lid, not for lying on its side.
