Every bakery runs on trays, and the rack is what turns twenty trays into one trip.
Ten tiers take ten full-size sheet pans, or twenty half-size pans two abreast. The rack is aluminium, so it weighs 9 kg empty and resists rust in a wash-down. Loaded, it is rated to 240 kg, which is more than ten trays of anything you would bake.
Four castors underneath, the rear two with brakes, so it rolls from bench to oven to cooling wall and stays put when it gets there. At 985 mm tall it is about bench height, and with a board on top it is a bench. Choose the 20 tier version for a full-height rack that stands beside the oven.

Questions
What size trays does it take?
Full-size sheet pans, one per tier, or two half-size pans side by side on the same tier. Ten full or twenty half in total.
Does it fit under a bench?
Not under a standard 900 mm bench: it stands 985 mm on its castors. It sits at about bench height beside one, and it takes a board on top if you want it as a work surface.
Can it go in a proofer or cool room?
It is aluminium, so cold, humidity and wash-down do not bother it. Check the door width of the cabinet: the rack is 660 mm wide and 515 mm deep.
Is it stable when loaded?
With trays spread across the tiers and the brakes on, yes. Load from the bottom up so the weight stays low, and do not stack more than one tray per runner. Two of the four castors brake, which holds it on a level floor.
Does it come assembled?
No. It comes with complete hardware and a manual, and the maker describes assembly as quick. Fit the castors last, or leave them off if it is staying put.
