A soup station that keeps three pots at serving temperature all day on a bench the width of a doormat.
Soup is the easiest thing on a menu to make and the hardest to hold. Too hot and it reduces and catches; too cool and it is not safe. A water bath solves both. The 1200 W element heats the water, the water heats the three pots evenly from the sides and the base, and the dial holds the lot anywhere from 30 to 85 °C. Lids keep the steam in so the soup does not skin over between customers.
Each pot is 7 litres, round, and stainless with a 0.7 mm wall. The bath has water-level marks inside and a drain tap, so topping up and draining are done without lifting anything. A cut-out stops the element if the bath runs dry, and a reset button starts it again.

Questions
Can I heat soup from cold in it?
It will, but slowly, and it is not what it is for. Bring soup to temperature on the stove, then transfer it to the pot. The warmer's job is to hold it there for the rest of service without further cooking.
Does each pot have its own temperature?
No. All three sit in one water bath with one dial. If you need different holding temperatures for different dishes, use the six-pan bain marie alongside it.
What if the bath boils dry?
A cut-out stops the element when the bath passes 120 °C. Refill with warm water, press the reset button, and it restarts. Keep an eye on the water-level marks inside during a long service.
Can I use it for sauces, gravy or chocolate?
Yes. Anything that needs holding warm without a direct flame works: gravy, cheese sauce, mulled wine, melted chocolate for a dessert station. Use the lids for anything that skins.
How do I clean it?
Drain the bath from the tap once it has cooled, wipe the well out, and wash the pots, lids and ladles. Descale the bath occasionally if your water is hard.
