A wet-bath warmer that holds a whole lunch menu at serving heat under glass, on a bench, from one power point.

The bath does the work. A 1500 W element sits under the water, the water sits under the pans, and the food never touches a dry heat that would crust a sauce or dry out rice. Set the dial anywhere from 30 to 85 °C and it holds there. Six 1/3 size pans, each 150 mm deep, go in the top, and you can combine or swap them as the menu changes.

The glass cover is the part people notice. It keeps breath and hands off the food, shows a customer what is in every pan, and comes off when you need to strip the unit for a wash.

Questions

Does it cook food or just hold it?

It holds. The bath tops out at 85 °C, which keeps cooked food well above the safe holding temperature without cooking it further. Bring food up to temperature on the stove first, then transfer it.

What happens if the water runs dry?

A cut-out stops the element when the bath goes past 120 °C. Refill with warm water, press the reset button on the unit, and it restarts. Do not pour cold water into a hot, empty bath; it can crack the element.

Will other pan sizes fit?

It comes with six 1/3 size pans that fit the 150 mm deep wells, and they can be combined or swapped between wells. Other pan sizes are not listed by the maker, so ask us before buying pans for it.

How do I drain it at the end of the day?

Open the drain valve into a bucket or a floor drain once the water has cooled a little. The bath then wipes out, and the stainless pans wash like any other.

How much power does it draw?

1500 W. Give it its own power point during service rather than sharing a board with a second warmer or a kettle.
